It has the bran layer, which gives this pasta a slightly chewier texture, the tan color, and the nut-like flavor. Brown rice grains are higher in fiber and nutritional content - oils, vitamin Bs and important minerals than white rice. My daughter, Gillian, was diagnosed with Celiac disease in 1992 when she was six years old. Learning what food were and were not safe was an exhausting process. many additives are wheat-based and found in most common foods. For me, an executive chef, finding a palatable bread that would not fall apart in Gillian's lunch box was my first mission.
